Glenda Rosales-Barretto: Flavors of the Philippines - Culinary Guide to the Best of the Islands. This is the other bible that I use when cooking Filipino dishes. The book is authored by one of the Philippines' most celebrated restaurateur and caterer, the CEO of Via Mare Catering Services. The book itself is lavishly illustrated with beautiful photographs of food and Philippine landscape. Every region of the Philippines is represented - so any Filipino will not feel left out. This is what I love about this book - it is very inclusive of the different culinary cultures of the Philippines. Many of the snacks and dishes that I loved when I was a kid growing up in Aklan are included. I am not sure if the book is widely distributed though.
