Reynaldo Alejandro: The Philippine Cookbook (Perigree Books, 1982,
1985). Really good, authentic Filipino cooking. Practically my bible
when it comes to cooking Filipino dishes. Alejandro is
a young Filipino - cook, caterer, dancer, choreographer, author -
living in New York. He was the one who coordinated food arrangements
during the Philippine week at Bloomingdale's sometime in the
1980s. Recently, he put out a handsome coffee table book with Lily O'Boyle
on Philippine Hospitality.
